Cod and Sweet Potato Bake Recipe

Health Focus: High protein, low fat, and rich in vitamin D
Why it’s healthy: Cod is a lean source of protein that’s low in calories and rich in vitamin D, supporting immune and bone health during the winter months. Sweet potatoes provide a boost of fibre and beta-carotene for eye and skin health.
Ingredients:
- 2 cod fillets
- 2 medium sweet potatoes, sliced
- 1 red onion, sliced
- 2 tsp smoked paprika
- 1 tsp olive oil
- Fresh thyme or rosemary
- Salt and black pepper to taste
Instructions:
- Preheat the oven to 190°C (375°F).
- Arrange sweet potato slices and red onion in a baking dish. Drizzle with olive oil, sprinkle with paprika, thyme, salt, and pepper.
- Bake for 20 minutes, then place the cod fillets on top of the sweet potatoes.
- Return to the oven and bake for another 12-15 minutes, until the cod is opaque and flakes easily.
- Serve immediately for a hearty, nutrient-packed meal.
