Cod and Sweet Potato Bake Recipe

Why it’s healthy: Cod is a lean source of protein that’s low in calories and rich in vitamin D, supporting immune and bone health during the winter months. Sweet potatoes provide a boost of fibre and beta-carotene for eye and skin health.

Ingredients:

  • 2 cod fillets
  • 2 medium sweet potatoes, sliced
  • 1 red onion, sliced
  • 2 tsp smoked paprika
  • 1 tsp olive oil
  • Fresh thyme or rosemary
  • Salt and black pepper to taste

Instructions:

  1. Preheat the oven to 190°C (375°F).
  2. Arrange sweet potato slices and red onion in a baking dish. Drizzle with olive oil, sprinkle with paprika, thyme, salt, and pepper.
  3. Bake for 20 minutes, then place the cod fillets on top of the sweet potatoes.
  4. Return to the oven and bake for another 12-15 minutes, until the cod is opaque and flakes easily.
  5. Serve immediately for a hearty, nutrient-packed meal.
