Creamy Coconut Prawn Curry Recipe

Ingredients (Serves 2-3)

  • 250g Just Caught Tiger Prawns (Raw & Peeled)
  • 1 tbsp vegetable oil
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1-inch piece of ginger, grated
  • 1 red chilli, finely chopped (optional for heat)
  • 1 tsp cumin
  • 1 tsp coriander powder
  • ½ tsp turmeric
  • 1 tsp garam masala
  • 200ml coconut milk
  • 100g chopped tomatoes
  • Juice of ½ lime
  • Fresh coriander, chopped (for garnish)
  • Salt & black pepper to taste
  • Cooked basmati rice, to serve

Method

  1. Heat the oil in a pan over medium heat. Add the chopped onion and sauté until golden brown.
  2. Stir in the garlic, ginger, and chilli, cooking for another minute until fragrant.
  3. Add the cumin, coriander, turmeric, and garam masala, stirring for 30 seconds to release the spices’ aroma.
  4. Pour in the chopped tomatoes and cook for 3-4 minutes until they soften.
  5. Add the coconut milk, season with salt and pepper, and let the sauce simmer for 5 minutes.
  6. Toss in the Just Caught tiger prawns and cook for 3-4 minutes, or until they turn pink and are cooked through.
  7. Squeeze in the lime juice, garnish with fresh coriander, and serve with steamed basmati rice.
