Ingredients:
- 4 salmon fillets (180g/6oz each), skinless and boneless
- ½ tsp salt
- ¼ tsp black pepper
- 1½ tbsp olive oil
- 1 tbsp garlic, finely minced (2 cloves)
- 90g salted butter, cubed
- 1 tsp lemon juice
- 2 tsp fresh parsley, chopped
Method:
- Prepare the Salmon: Take the salmon out of the fridge 30 minutes before cooking to bring it to room temperature. Season both sides with salt and pepper.
- Sear the Salmon: Heat olive oil in a large non-stick pan over medium-high heat. Place the salmon fillets in the pan, presentation side down (the curved side), and cook for 3 minutes until golden.
- Add Butter and Garlic: Flip the salmon and cook the other side for 1 minute. Add the butter to the pan. As soon as it melts, add the garlic.
- Baste with Garlic Butter: Begin spooning the melted butter over the salmon continuously for 1½ minutes. This helps the garlic cook to perfection while infusing the salmon with rich flavour.
- Serve: Remove the salmon from the stove, let it rest for 3 minutes. Spoon the remaining garlic butter from the pan over the salmon, add a squeeze of lemon, and garnish with parsley. Enjoy!
