Homemade Cod Fish Cakes Recipe

Ingredients:

  • 400g cod fillets (skinless, boneless)
  • 400g potatoes, peeled and chopped
  • 2 tbsp olive oil
  • 1 small onion, finely chopped
  • 1 garlic clove, finely minced
  • 1 tbsp fresh parsley, chopped
  • 1 tbsp fresh dill, chopped
  • 1 tsp lemon zest
  • 1 tbsp capers, drained (optional)
  • 1 egg, beaten
  • Salt and black pepper to taste
  • 100g plain flour (for coating)
  • 1 tbsp butter (for frying)
  • 2 tbsp vegetable oil (for frying)

Method:

  1. Prepare the Potatoes: Boil the potatoes in salted water until soft (about 10-12 minutes). Drain well and mash until smooth. Set aside to cool slightly.
  2. Cook the Cod: While the potatoes are boiling, poach the cod fillets. Place them in a pan and cover with water. Bring to a gentle simmer and cook for 5-6 minutes, until the fish is just cooked through and flakes easily. Drain and let the cod cool slightly, then flake into large pieces.
  3. Sauté the Onion and Garlic: Heat 1 tablespoon of olive oil in a pan over medium heat. Add the finely chopped onion and garlic, cooking until soft and translucent. Set aside to cool.
  4. Mix the Fish Cake Mixture: In a large bowl, combine the mashed potatoes, flaked cod, sautéed onion and garlic, chopped parsley, dill, lemon zest, capers (if using), and beaten egg. Season with salt and pepper to taste. Mix gently to combine, being careful not to break the fish into very small pieces.
  5. Shape the Fish Cakes: Using your hands, shape the mixture into small patties, about 2-3 cm thick. Place them on a tray and chill in the fridge for 30 minutes to firm up.
  6. Coat and Fry: Lightly coat the fish cakes in flour. Heat the butter and vegetable oil in a large frying pan over medium heat. Fry the fish cakes for about 3-4 minutes on each side, or until golden brown and crispy.
  7. Serve: Serve your crispy cod fish cakes with a wedge of lemon, tartare sauce, and a fresh green salad or some mushy peas.
