  • 4 fresh cod fillets (about 150g each)
  • Salt and freshly ground black pepper, to taste
  • 2 tbsp olive oil
  • 50g unsalted butter
  • 2 cloves garlic, minced
  • Zest and juice of 1 lemon
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh dill, chopped
  • Lemon wedges, for serving

Instructions:

Step 1: Prepare the Cod Fillets

  1. Pat the cod fillets dry with kitchen paper. Season both sides with salt and freshly ground black pepper.

Step 2: Sear the Cod

  1. Heat 2 tablespoons of olive oil in a large non-stick frying pan over medium-high heat.
  2. Add the cod fillets to the pan and cook for 3-4 minutes on each side, or until the fish is golden brown and flakes easily with a fork. Remove the fillets from the pan and keep warm.

Step 3: Make the Lemon Herb Butter

  1. In the same pan, reduce the heat to medium and add the unsalted butter. Allow it to melt and start to turn a light golden brown.
  2. Add the minced garlic to the pan and cook for 1-2 minutes until fragrant, being careful not to let it burn.
  3. Stir in the lemon zest and juice, chopped parsley, and dill. Cook for another minute, allowing the flavours to meld together.

Step 4: Serve

  1. Return the cod fillets to the pan and spoon the lemon herb butter sauce over the top, ensuring they are well coated.
  2. Serve the cod fillets on plates with extra sauce drizzled over them.
  3. Garnish with lemon wedges and additional fresh herbs if desired.
